Roasted Tomato and Spinach Quiche
Yield: 6 servings
Ingredients:
5 roasted and diced roma tomatoes
1 cup spinach
½ white onion
8 eggs whisked
1tsp paprika
1tsp cayenne Pinch salt and pepper
Directions:
- Whisk eggs in mixing bowl.
- Sautee onions until tender, then add tomatoes, spinach.
- Add mixture to eggs.
- Add paprika, cayenne, salt and pepper.
- Add all into cooked pie pan or cast iron skillet
- Bake at 350 degrees until center is firm.
